Ingredients
- 1 cup red lentils, rinsed and drained
- 1 bunch rainbow chard, stems and leaves separated
- 1 onion, diced
- 3 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 teaspoon ground cumin
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon ground coriander
- 4 cups vegetable broth
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh lemon juice for serving
Directions
- In a large pot, heat the olive oil over medium heat. Add the onion, garlic, carrot, and celery, and sauté for 5 minutes until the vegetables are softened.
