Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup of your favorite BBQ sauce
- 4 ears of corn, husked and cut into 4 pieces each
- 1 can of pinto beans, drained and rinsed
- 1 tablespoon of olive oil
- Salt and pepper to taste
Directions
- Preheat the oven to 375°F or prepare the grill.
- Lay out 8 large pieces of aluminum foil and brush each one with olive oil.
- Place a chicken breast in the center of each piece of foil and season with salt and pepper.
- Brush each chicken breast with 1 tablespoon of BBQ sauce.
- Divide the corn and pinto beans among the 4 pieces of foil, arranging them around the chicken.
- Fold the foil in half and crimp the edges to create a sealed packet.
- Place the foil packets on a baking sheet and bake in the oven for 25-30 minutes or until the chicken is cooked through.
- Remove the foil packets from the oven and let them rest for 5 minutes before serving.
