Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup of your favorite BBQ sauce
  • 4 ears of corn, husked and cut into 4 pieces each
  • 1 can of pinto beans, drained and rinsed
  • 1 tablespoon of olive oil
  • Salt and pepper to taste

Directions

  1. Preheat the oven to 375°F or prepare the grill.
  2. Lay out 8 large pieces of aluminum foil and brush each one with olive oil.
  3. Place a chicken breast in the center of each piece of foil and season with salt and pepper.
  4. Brush each chicken breast with 1 tablespoon of BBQ sauce.
  5. Divide the corn and pinto beans among the 4 pieces of foil, arranging them around the chicken.
  6. Fold the foil in half and crimp the edges to create a sealed packet.
  7. Place the foil packets on a baking sheet and bake in the oven for 25-30 minutes or until the chicken is cooked through.
  8. Remove the foil packets from the oven and let them rest for 5 minutes before serving.
