Ingredients
4 boneless, skinless chicken breasts
1/4 cup of your favorite BBQ sauce
4 ears of corn, husked and cut into 4 pieces each
1 can of pinto beans, drained and rinsed
1 tablespoon of olive oil
Salt and pepper to taste
Directions
Preheat the oven to 375°F or prepare the grill.
Lay out 8 large pieces of aluminum foil and brush each one with olive oil.
Place a chicken breast in the center of each piece of foil and season with salt and pepper.
Brush each chicken breast with 1 tablespoon of BBQ sauce.
Divide the corn and pinto beans among the 4 pieces of foil, arranging them around the chicken.

Place the foil packets on a baking sheet and bake in the oven for 25-30 minutes or until the chicken is cooked through.
Remove the foil packets from the oven and let them rest for 5 minutes before serving.
