Ingredients
2 cups of whole milk
4 egg yolks
1/2 cup of sugar
1 teaspoon of vanilla extract

Directions
Preheat a sous-vide bath to 185°F.
In a medium bowl, whisk together the egg yolks, sugar, and vanilla until the sugar is dissolved.
Slowly add the milk, whisking constantly until it is all incorporated.
Strain the mixture through a fine mesh sieve to remove any lumps.
Divide the mixture evenly among 4 mason jars or other airtight containers.
Place the jars in the sous-vide bath and cook for 1 hour.
Remove the jars from the bath and allow to cool to room temperature.
Once cooled, refrigerate for at least 4 hours or overnight.
To serve, sprinkle with nutmeg and enjoy!
