Ingredients
- 2 cups of whole milk
- 4 egg yolks
- 1/2 cup of sugar
- 1 teaspoon of vanilla extract
- 1/4 teaspoon of ground nutmeg
Directions
- Preheat a sous-vide bath to 185°F.
- In a medium bowl, whisk together the egg yolks, sugar, and vanilla until the sugar is dissolved.
- Slowly add the milk, whisking constantly until it is all incorporated.
- Strain the mixture through a fine mesh sieve to remove any lumps.
- Divide the mixture evenly among 4 mason jars or other airtight containers.
- Place the jars in the sous-vide bath and cook for 1 hour.
- Remove the jars from the bath and allow to cool to room temperature.
- Once cooled, refrigerate for at least 4 hours or overnight.
- To serve, sprinkle with nutmeg and enjoy!
