Ingredients

  • 2 cups of whole milk
  • 4 egg yolks
  • 1/2 cup of sugar
  • 1 teaspoon of vanilla extract
  • 1/4 teaspoon of ground nutmeg

Directions

  1. Preheat a sous-vide bath to 185°F.
  2. In a medium bowl, whisk together the egg yolks, sugar, and vanilla until the sugar is dissolved.
  3. Slowly add the milk, whisking constantly until it is all incorporated.
  4. Strain the mixture through a fine mesh sieve to remove any lumps.
  5. Divide the mixture evenly among 4 mason jars or other airtight containers.
  6. Place the jars in the sous-vide bath and cook for 1 hour.
  7. Remove the jars from the bath and allow to cool to room temperature.
  8. Once cooled, refrigerate for at least 4 hours or overnight.
  9. To serve, sprinkle with nutmeg and enjoy!
