Ingredients
- 1/2 cup all-purpose flour
- 2 tablespoons sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 eggs
- 1/2 cup milk
- 2 tablespoons butter, melted
- 1/2 teaspoon vanilla extract
- 2 tablespoons butter
- 2 cups diced apples
- 1/4 cup brown sugar
- 1/2 teaspoon cinnamon
- 1/4 cup heavy cream
Directions
- In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together the eggs, milk, melted butter, and vanilla extract.
- Slowly add the wet ingredients to the dry ingredients and whisk until smooth.
- In a medium skillet over medium heat, melt the butter.
- Add the apples, brown sugar, and cinnamon and cook for 5 minutes, stirring occasionally.
- Add the cream and cook for an additional 2 minutes.
- Remove from heat and set aside.
- Heat a large non-stick skillet over medium heat.
- Pour about 1/4 cup of the batter into the pan and swirl to spread the batter evenly.
- Cook for about 2 minutes, until the edges start to brown.
- Flip the crepe and cook for an additional 2 minutes.
- Remove from heat and fill with the apple cinnamon mixture.
- Fold the crepe in half and then in thirds to form a triangle.
- Repeat with remaining batter and filling.
- Serve warm and enjoy!
