Ingredients
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup butter, softened
- 3/4 cup white sugar
- 2 eggs
- 1/2 teaspoon vanilla extract
- 1/2 cup milk
- 1 cup mixed fresh or frozen fruit (blueberries, raspberries, strawberries, etc.)
- 1/2 cup rolled oats
- 1/2 cup brown sugar
- 1/4 cup chopped nuts (optional)
Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch round cake pan.
- In a medium bowl, mix together the flour, baking powder and salt. Set aside.
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Beat in the flour mixture alternately with the milk. Fold in the fruit.
- Spread the batter evenly into the prepared pan. In a small bowl, mix together the oats, brown sugar and nuts (if using). Sprinkle over the top of the cake.
- Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pan for 10 minutes, then turn out onto a wire rack and cool completely.
