1 cup mixed fresh or frozen fruit (blueberries, raspberries, strawberries, etc.)
1/2 cup rolled oats
1/2 cup brown sugar
1/4 cup chopped nuts (optional)
Directions
Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch round cake pan.
In a medium bowl, mix together the flour, baking powder and salt. Set aside.
In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Beat in the flour mixture alternately with the milk. Fold in the fruit.
Spread the batter evenly into the prepared pan. In a small bowl, mix together the oats, brown sugar and nuts (if using). Sprinkle over the top of the cake.
Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pan for 10 minutes, then turn out onto a wire rack and cool completely.
