Ingredients
1 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon

1 cup plant-based milk

Directions
In a medium bowl, combine the flour, baking powder, salt, cinnamon and sugar.
In a separate bowl, whisk together the milk, oil and vanilla extract.
Pour the wet ingredients into the dry ingredients and whisk until just combined.
Heat a non-stick skillet over medium heat and grease with oil.
Pour 1/4 cup of the batter onto the hot skillet and cook until bubbles form on the surface of the pancake, about 1 to 2 minutes.
Flip and cook for another 1 to 2 minutes. Repeat with remaining batter.
Serve with your favorite toppings and enjoy!
