Ingredients

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon of sugar
  • 1 cup plant-based milk
  • 2 tablespoons oil
  • 1 teaspoon vanilla extract

Directions

  1. In a medium bowl, combine the flour, baking powder, salt, cinnamon and sugar.
  2. In a separate bowl, whisk together the milk, oil and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and whisk until just combined.
  4. Heat a non-stick skillet over medium heat and grease with oil.
  5. Pour 1/4 cup of the batter onto the hot skillet and cook until bubbles form on the surface of the pancake, about 1 to 2 minutes.
  6. Flip and cook for another 1 to 2 minutes. Repeat with remaining batter.
  7. Serve with your favorite toppings and enjoy!
