Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup plain Greek yogurt
  • 2 large eggs
  • 2 tablespoons melted butter, plus extra for cooking
  • 1 teaspoon vanilla extract
    • Directions

      1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
      2. In a separate bowl, whisk together the Greek yogurt, eggs, melted butter, and vanilla extract until combined.
      3. Pour the wet ingredients into the dry ingredients and whisk until just combined; do not overmix.
      4. Heat a nonstick skillet or griddle over medium heat. Grease with butter.

      7. Flip the pancake and cook for an additional 1-2 minutes, or until golden brown.
      8. Repeat with remaining batter.
