Scrub potatoes and pat dry. Rub each potato with olive oil and season with salt and pepper.
Bake potatoes for 45 minutes, or until tender. Remove from oven and let cool.
Cut potatoes in half lengthwise. Scoop out the pulp, leaving a 1/4-inch-thick shell. Reserve the pulp for another use.
Brush the inside of the potato skins with melted butter, and sprinkle with garlic powder, onion powder, paprika, oregano, thyme, and salt and pepper.
Place the potato skins on a baking sheet and bake in the preheated oven for 15 minutes, or until golden brown and crispy.
Remove from oven and fill each potato skin with cheese, bacon, and green onion. Return to oven for an additional 5 minutes, or until the cheese is melted.
Serve hot.
