Ingredients

  • 1/2 pound dried noodles
  • 3 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup sliced mushrooms
  • 1 red bell pepper, chopped
  • 1/2 cup frozen peas
  • 1/2 cup chicken broth
  • 1/4 cup white wine
  • 3 tablespoons grated Parmesan cheese
  • 1/4 teaspoon dried oregano
  • Salt and pepper to taste

Directions

  1. Bring a pot of lightly salted water to a boil. Add the noodles and cook until al dente, about 6 minutes.
  2. Meanwhile, heat the olive oil in a large skillet over medium heat. Add the onion and garlic and sauté until the onion is softened, about 5 minutes.
  3. Add the mushrooms, bell pepper, and peas and sauté until the vegetables are tender, about 5 minutes.
  4. Stir in the chicken broth, white wine, Parmesan cheese, oregano, and salt and pepper.
  5. Drain the noodles and add them to the skillet. Toss the noodles and vegetables together until heated through, about 3 minutes.
  6. Serve the noodles hot.
