Ingredients

  • 4 salmon fillets
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/2 cup chopped red onion
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced yellow bell pepper
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes
  • 1/2 cup sliced black olives
  • 2 tablespoons capers
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup chopped fresh basil

Directions

  1. Preheat an outdoor grill to medium-high heat.
  2. Season the salmon fillets with salt and pepper.
  3. Brush the fish with olive oil and place on the preheated grill.
  4. Grill for 4 to 5 minutes per side or until the fish is cooked through.
  5. Meanwhile, heat the olive oil in a large skillet over medium heat.
  6. Add the red onion, red bell pepper, yellow bell pepper, and garlic and sauté for 3 to 4 minutes or until the vegetables are tender.
  7. Stir in the diced tomatoes, olives, capers, and red pepper flakes and simmer for 10 minutes.
  8. Stir in the basil and season to taste with salt and pepper.
  9. Spoon the sauce over the fish fillets and serve.
