- 4 salmon fillets
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1/2 cup chopped red onion
- 1/2 cup diced red bell pepper
- 1/2 cup diced yellow bell pepper
- 2 cloves garlic, minced
- 1 (14.5 ounce) can diced tomatoes
- 1/2 cup sliced black olives
- 2 tablespoons capers
- 1/4 teaspoon red pepper flakes
- 1/4 cup chopped fresh basil
Directions
- Preheat an outdoor grill to medium-high heat.
- Season the salmon fillets with salt and pepper.
- Brush the fish with olive oil and place on the preheated grill.
- Grill for 4 to 5 minutes per side or until the fish is cooked through.
- Meanwhile, heat the olive oil in a large skillet over medium heat.
- Add the red onion, red bell pepper, yellow bell pepper, and garlic and sauté for 3 to 4 minutes or until the vegetables are tender.
- Stir in the diced tomatoes, olives, capers, and red pepper flakes and simmer for 10 minutes.
- Stir in the basil and season to taste with salt and pepper.
- Spoon the sauce over the fish fillets and serve.
