Ingredients

  • 1 head of cauliflower
  • 1 tablespoon of olive oil
  • 1/2 cup of diced onion
  • 2 cloves of garlic, minced
  • 1/2 cup of diced carrots
  • 1/2 cup of diced celery
  • 1/2 cup of frozen peas
  • 1/4 cup of soy sauce
  • 1/4 teaspoon of ground ginger
  • 1/4 teaspoon of black pepper
  • 2 eggs, optional

Directions

  1. Cut the cauliflower into small florets and place in a food processor. Pulse the cauliflower until it resembles rice.
  2. Heat the olive oil in a large skillet over medium heat. Add the onion, garlic, carrots, and celery. Cook for 3-4 minutes, stirring occasionally.
  3. Add the cauliflower rice, peas, soy sauce, ginger, and pepper. Cook for 5-6 minutes or until the cauliflower is tender.
  4. If desired, add the eggs to the skillet and scramble until cooked through.
  5. Serve warm and enjoy!
