Ingredients
- 1 head of cauliflower
- 1 tablespoon of olive oil
- 1/2 cup of diced onion
- 2 cloves of garlic, minced
- 1/2 cup of diced carrots
- 1/2 cup of diced celery
- 1/2 cup of frozen peas
- 1/4 cup of soy sauce
- 1/4 teaspoon of ground ginger
- 1/4 teaspoon of black pepper
- 2 eggs, optional
Directions
- Cut the cauliflower into small florets and place in a food processor. Pulse the cauliflower until it resembles rice.
- Heat the olive oil in a large skillet over medium heat. Add the onion, garlic, carrots, and celery. Cook for 3-4 minutes, stirring occasionally.
- Add the cauliflower rice, peas, soy sauce, ginger, and pepper. Cook for 5-6 minutes or until the cauliflower is tender.
- If desired, add the eggs to the skillet and scramble until cooked through.
- Serve warm and enjoy!
