Ingredients

  • 2 pounds fingerling potatoes
  • 1/4 cup olive oil
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 cup butter, softened
  • 1 tablespoon chopped fresh tarragon
  • 1 tablespoon chopped fresh chives

Directions

  1. Preheat oven to 425°F. Line a baking sheet with parchment paper.
  2. In a large bowl, toss the potatoes with the olive oil, salt, and pepper. Spread the potatoes out on the prepared baking sheet.
  3. Roast the potatoes for 25 minutes, until golden and crispy.
  4. Meanwhile, in a small bowl, mix together the butter, tarragon, and chives.
  5. Remove the potatoes from the oven and let cool slightly. Spread the herbed butter over the potatoes and serve warm.
