Ingredients
- 2 pounds fingerling potatoes
- 1/4 cup olive oil
- 1 teaspoon Kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 cup butter, softened
- 1 tablespoon chopped fresh tarragon
- 1 tablespoon chopped fresh chives
Directions
- Preheat oven to 425°F. Line a baking sheet with parchment paper.
- In a large bowl, toss the potatoes with the olive oil, salt, and pepper. Spread the potatoes out on the prepared baking sheet.
- Roast the potatoes for 25 minutes, until golden and crispy.
- Meanwhile, in a small bowl, mix together the butter, tarragon, and chives.
- Remove the potatoes from the oven and let cool slightly. Spread the herbed butter over the potatoes and serve warm.
