Ingredients

  • 1 pound chicken thighs, cut into cubes
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1 teaspoon paprika
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cinnamon
  • 1 teaspoon chili powder
  • 1 tablespoon tomato paste
  • 1 cup coconut milk
  • 1 cup water
  • Salt and pepper to taste

Directions

  1. In a large skillet over medium heat, add the chicken and cook until lightly browned, about 5 minutes.
  2. Add the onion and garlic and cook until softened, about 3 minutes.
  3. Add the ginger, cumin, turmeric, paprika, coriander, cinnamon, and chili powder and stir to combine.
  4. Add the tomato paste and stir to combine.
  5. Add the coconut milk and water and stir to combine.
  6. Bring the mixture to a boil, reduce the heat to low, and simmer until the chicken is cooked through, about 10 minutes.
  7. Season with salt and pepper to taste.
  8. Serve hot with steamed rice or naan.
