Ingredients

  • 3 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon ground black pepper
  • 4 cups vegetable broth
  • 3 cups cauliflower florets
  • 2 cups diced potatoes
  • 1/2 cup coconut milk
  • Salt and pepper to taste
  • Optional toppings: chopped fresh parsley, vegan parmesan cheese, croutons

Directions

  1. Heat the olive oil in a large pot over medium-high heat.
  2. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Add the cumin, smoked paprika, oregano, coriander, red pepper flakes, and black pepper and stir to combine.
  4. Add the vegetable broth, cauliflower, and potatoes and bring to a simmer.
  5. Reduce the heat to low and simmer for 20 minutes, or until the vegetables are tender.
  6. Using an immersion blender, blend the soup until smooth. Alternatively, you can transfer the soup to a blender and blend until smooth.
  7. Stir in the coconut milk and season with salt and pepper to taste.
  8. Serve the soup with your favorite toppings.
