Ingredients

  • 2 filet mignon steaks
  • 2 tablespoons olive oil
  • 2 cloves of garlic, minced
  • 1 shallot, finely chopped
  • 1 cup merlot wine
  • 1 cup beef broth
  • 2 tablespoons butter
  • Salt and pepper to taste

Directions

  1. Preheat the oven to 400°F (200°C).
  2. Season the filet mignon steaks with salt and pepper on both sides.
  3. Heat olive oil in a skillet over high heat.
  4. Sear the steaks for 2-3 minutes on each side until browned. Remove from the skillet and transfer to a baking dish.
  5. Bake the steaks in the preheated oven for 10-12 minutes for medium-rare doneness. Adjust the cooking time according to your preferred level of doneness.
  6. While the steaks are baking, prepare the merlot sauce.
  7. In the same skillet used to sear the steaks, reduce the heat to medium and add minced garlic and chopped shallot. Cook until softened and fragrant.
  8. Pour in the merlot wine and beef broth, scraping the bottom of the skillet to release any browned bits.
  9. Simmer the sauce for about 10 minutes or until it thickens and reduces by half.
  10. Remove the skillet from heat and stir in the butter until melted. Season with salt and pepper to taste.
  11. Take the steaks out of the oven and let them rest for a couple of minutes before serving.
  12. Pour the merlot sauce over the steaks and serve hot.
