Ingredients

  • 8 ounces angel hair pasta
  • 1 pound shrimp, peeled and deveined
  • 8 ounces mushrooms, sliced
  • 4 cloves garlic, minced
  • 1/4 cup white wine
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper, to taste

Directions

  1. Cook the angel hair pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil and butter over medium heat.
  3. Add the shrimp to the skillet and season with salt and pepper. Cook for 2-3 minutes on each side until pink and cooked through. Remove the shrimp from the skillet and set aside.
  4. In the same skillet, add the sliced mushrooms and cook until softened and lightly browned, about 5 minutes.
  5. Add the minced garlic to the skillet and cook for an additional 1 minute until fragrant.
  6. Pour in the white wine and chicken broth, stirring to deglaze the skillet and scrape up any browned bits.
  7. Reduce the heat to low and stir in the heavy cream. Simmer for 2-3 minutes until the sauce has thickened slightly.
  8. Stir in the grated parmesan cheese until melted and smooth. Season with salt and pepper to taste.
  9. Add the cooked angel hair pasta and cooked shrimp to the skillet, tossing to coat them in the sauce.
  10. Serve the shrimp and mushroom angel hair pasta hot, garnished with freshly chopped parsley.
