Ingredients

  • 1 pound fettuccine
  • 2 tablespoons olive oil
  • 1 large sweet onion, chopped
  • 2 cloves garlic, minced
  • 1 large red bell pepper, seeded and chopped
  • 1 large green bell pepper, seeded and chopped
  • 1 teaspoon cayenne pepper
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1/4 cup grated Parmesan cheese

Directions

  1. Bring a large pot of salted water to a boil. Add the fettuccine and cook until al dente, about 10 minutes.
  2. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and cook for 5 minutes until the onion is translucent. Add the bell peppers and cook for another 5 minutes.
  3. Add the cayenne pepper, black pepper, and salt to the skillet, and stir to combine. Cook for an additional minute.
  4. Drain the cooked fettuccine and add it to the skillet with the vegetables. Stir to combine and cook for 1-2 minutes.
  5. Remove the skillet from the heat and stir in the Parmesan cheese. Serve hot.
