Ingredients

  • 1½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • ½ cup butter, melted
  • ½ cup light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup eggnog
  • ¼ cup dark rum

Directions

  1. Preheat the oven to 350°F and line a 12-cup muffin tin with paper liners.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, nutmeg, and salt.
  3. In a large bowl, mix together the melted butter and brown sugar until combined.
  4. Add the eggs, one at a time, whisking until fully incorporated.
  5. Whisk in the vanilla extract, eggnog, and rum until combined.
  6. Add the dry ingredients to the wet ingredients and mix until just combined.
  7. Divide the batter among the muffin cups and bake for 18-20 minutes, or until a cake tester inserted into the center of a muffin comes out clean.
  8. Let the muffins cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
