Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup white wine
  • 1 (14.5-ounce) can diced tomatoes, with their juices
  • 2 cups chicken broth
  • 1 pound peeled and deveined shrimp

Directions

  1. Heat the olive oil in a large saucepan over medium-high heat. Add the onion and garlic and cook, stirring occasionally, until the onion is softened, about 5 minutes.
  2. Stir in the oregano, red pepper flakes, salt and pepper, and cook for 1 minute. Add the wine and cook, stirring occasionally, until the wine is reduced by half, about 2 minutes.
  3. Add the tomatoes and their juices and the broth to the saucepan and bring to a boil. Reduce the heat to medium-low and simmer for 10 minutes.
  4. Add the shrimp to the saucepan and simmer until they are cooked through, about 5 minutes. Serve hot.
