Ingredients
- 1/4 cup honey
- 1/4 cup unsweetened applesauce
- 1/4 cup mashed prunes
- 1/4 cup mini chocolate chips
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup whole wheat pastry flour
Directions
- Preheat oven to 375°F.
- In a large bowl, mix together honey, applesauce, and prunes.
- In a separate bowl, mix together the chocolate chips, baking powder, baking soda, salt, and flour.
- Add the dry ingredients to the wet ingredients and mix until combined.
- Spoon the batter into a greased mini muffin tin, filling each cup about 3/4 full.
- Bake for 15-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Let cool before serving.
