Ingredients

  • 2 pounds parsnips, peeled and cut into 1-inch cubes
  • 2 tablespoons butter
  • 1 onion, diced
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1/2 cup panko breadcrumbs
  • 2 tablespoons butter, melted

Directions

  1. Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13 inch baking dish.
  2. Bring a large pot of salted water to a boil. Add the parsnips and cook for 10 minutes, or until tender.
  3. Drain the parsnips and set aside.
  4. In a large skillet over medium heat, melt the 2 tablespoons of butter. Add the onion and cook until softened, about 5 minutes.
  5. Add the garlic powder and thyme and cook for another minute.
  6. Add the cream and stir to combine. Simmer for 5 minutes.
  7. Remove from heat and stir in the Parmesan cheese. Season with salt and pepper to taste.
  8. In a small bowl, combine the panko and melted butter.
  9. Add the parsnips to the baking dish and pour the cream mixture over them. Sprinkle the panko mixture over the top.
  10. Bake for 20 minutes, or until golden brown and bubbly.
