Ingredients

  • 3/4 cup egg whites (180 ml)
  • 1/4 cup oat flour (30 g)
  • 1 scoop unflavored protein powder (30 g)
  • 1/4 teaspoon baking powder (1.2 g)
  • 1/2 teaspoon cinnamon (2.8 g)
  • 1 teaspoon olive oil (4.9 g)
  • Optional: 1 tablespoon sugar-free sweetener (13 g)

Directions

  1. Preheat oven to 400°F (200°C). Grease a regular-sized muffin pan with cooking spray and set aside.
  2. In a medium bowl, mix together egg whites, oat flour, protein powder, baking powder, cinnamon, and sweetener (if using).
  3. Add in olive oil and mix until fully combined.
  4. Spoon the batter into the muffin pan. Bake for 12 to 14 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
  5. Let cool before serving.
