Directions
In a large mixing bowl, mash the ripe bananas until smooth.
Add the rolled oats, peanut butter, honey, protein powder, chopped nuts, and dark chocolate chips (if using) to the bowl. Mix well until all the ingredients are combined.
Line a baking dish or pan with parchment paper. Transfer the mixture into the pan and spread it evenly, pressing it down firmly.
Cover the pan and refrigerate for at least 2 hours, or until the mixture is firm and set.
Once the mixture is firm, remove it from the pan and cut it into desired bar shapes.
Store the bars in an airtight container in the refrigerator and enjoy as a healthy snack or post-workout treat!
