- 1 cup basmati rice
- 3 medium tomatoes, finely chopped

- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder

- 1/2 teaspoon coriander powder
- 1/4 cup chopped coriander leaves
- 2 tablespoons oil
- Salt to taste
Directions
- Rinse the basmati rice under running water until the water runs clear. Soak the rice in water for 30 minutes, then drain and set aside.
- Heat oil in a large pan or pot over medium heat. Add cumin seeds and mustard seeds. Let them splutter.
- Add sliced onions and green chilies. Sauté until the onions turn translucent.
- Add ginger-garlic paste and sauté for a minute until the raw smell disappears.
- Add chopped tomatoes, turmeric powder, red chili powder, garam masala, cumin powder, coriander powder, and salt. Mix well and cook for 5-6 minutes until the tomatoes become mushy.
- Add the soaked and drained basmati rice to the tomato mixture. Stir well to coat the rice with the spices.
- Pour 2 cups of water into the pan. Bring it to a boil, then reduce the heat to low. Cover the pan and let it simmer for about 15-20 minutes or until the rice is cooked and all the water is absorbed.
- Remove the pan from heat and let it rest for 5 minutes. Fluff the rice gently with a fork.
- Garnish with chopped coriander leaves and serve hot with raita or any curry of your choice.
