Ingredients

  • 3 cups cooked rice, preferably day-old
  • 2 tablespoons vegetable oil
  • 1 cup diced chicken breasts
  • 1 cup peeled and deveined shrimp
  • 1 cup diced ham
  • 1 cup diced carrots
  • 1 cup frozen peas
  • 3 cloves garlic, minced
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • 2 green onions, chopped for garnish

Directions

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat.
  2. Add the diced chicken breasts and cook until they are no longer pink. Remove from the skillet and set aside.
  3. In the same skillet, add the shrimp and cook until they are pink and opaque. Remove from the skillet and set aside.
  4. Add the remaining tablespoon of vegetable oil to the skillet.
  5. Add the minced garlic and cook until it becomes fragrant.
  6. Add the diced ham, carrots, and peas. Cook until the vegetables are tender.
  7. Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until they are fully cooked.
  8. Add the cooked rice to the skillet and mix well with the vegetables and eggs.
  9. Pour the soy sauce, oyster sauce, and sesame oil over the rice. Stir to combine.
  10. Season with salt and pepper to taste.
  11. Return the cooked chicken and shrimp to the skillet. Stir fry for an additional 2-3 minutes to warm them through.
  12. Garnish the fried rice with chopped green onions.
  13. Serve hot and enjoy!
