Ingredients

  • 1 pound large shrimp, deveined and shell on
  • 1 cup chicken broth
  • 1 cup water
  • 1 lemon, sliced
  • 4 garlic cloves, minced
  • 2 tablespoons Old Bay seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Fresh parsley, chopped (for garnish)

Directions

  1. Add chicken broth, water, sliced lemon, minced garlic, Old Bay seasoning, salt, black pepper, paprika, and cayenne pepper (if using) to the Instant Pot.
  2. Close the Instant Pot lid and set the valve to the sealing position.
  3. Select the 'Manual' or 'Pressure Cook' setting and set the timer for 3 minutes on high pressure.
  4. While the Instant Pot is coming to pressure and cooking, rinse the shrimp with cold water.
  5. After the cooking cycle ends, do a quick release of the pressure by moving the valve to the venting position.
  6. Carefully open the Instant Pot lid and add the shrimp to the pot, making sure they are fully submerged in the broth.
  7. Close the Instant Pot lid again and set the valve to the sealing position.
  8. Select the 'Manual' or 'Pressure Cook' setting and set the timer for 2 minutes on high pressure.
  9. Once the cooking cycle ends, allow the Instant Pot to naturally release pressure for 5 minutes.
  10. Carefully move the valve to the venting position to release any remaining pressure.
  11. Open the Instant Pot lid and use a slotted spoon to transfer the cooked shrimp to a serving dish.
  12. Garnish with fresh chopped parsley and serve hot with some of the cooking broth on the side.
