Ingredients

  • 1 ½ pounds ground beef
  • 1 cup breadcrumbs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • 1 teaspoon Worcestershire sauce
  • 1 egg, beaten
  • ½ cup barbecue sauce, divided
  • 1 cup shredded cheddar cheese

Directions

  1. In a large bowl, combine the ground beef, breadcrumbs, onion, garlic, salt, black pepper, paprika, dried oregano, dried parsley, Worcestershire sauce, egg, and ¼ cup of the barbecue sauce.
  2. Mix well with your hands until all ingredients are well combined.
  3. Shape the mixture into a loaf and place it on a piece of aluminum foil.
  4. Fold the foil over the meatloaf, sealing the edges to form a packet.
  5. Pour 1 cup of water into the Instant Pot and place a trivet inside.
  6. Carefully place the foil-wrapped meatloaf onto the trivet.
  7. Close the Instant Pot lid and set the valve to the sealing position.
  8. Select the Manual/Pressure Cook function and set the cooking time to 25 minutes on high pressure.
  9. Once the cooking time is complete, allow a natural release for 10 minutes, then manually release any remaining pressure.
  10. Carefully remove the meatloaf from the Instant Pot using the trivet handles.
  11. Unwrap the foil packet and discard the foil.
  12. Brush the remaining ¼ cup of barbecue sauce over the top of the meatloaf.
  13. Sprinkle the shredded cheddar cheese on top.
  14. Place the meatloaf under the broiler for a few minutes, until the cheese is melted and bubbly.
  15. Remove from the oven and let it rest for a few minutes before slicing.
  16. Serve the meatloaf with additional barbecue sauce on the side and your favorite sides.
