Ingredients

  • 2 cups all-purpose flour
  • 1 cup warm water
  • 1 tablespoon active dry yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 1/4 cup mixed nuts (such as almonds, hazelnuts, and pistachios), finely chopped
  • 1/4 cup sesame seeds
  • 2 tablespoons coriander seeds
  • 2 tablespoons cumin seeds
  • 1 tablespoon fennel seeds
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/2 cup plain Greek yogurt
  • 1/4 cup chevre (goat cheese)
  • 1 clove garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh mint, chopped
  • 1/4 teaspoon salt
  • Extra virgin olive oil, for drizzling

Directions

  1. In a small bowl, combine warm water, yeast, and sugar. Let it sit for 5 minutes until foamy.
  2. In a large mixing bowl, combine flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.
  3. Mix the ingredients together until a dough forms.
  4. Transfer the dough to a floured surface and knead for about 5 minutes until smooth and elastic.
  5. Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm place for 1 hour or until doubled in size.
  6. Preheat your oven to 425°F (220°C).
  7. In a dry skillet, toast the nuts, sesame seeds, coriander seeds, cumin seeds, and fennel seeds over medium heat for a few minutes until fragrant. Remove from heat and let it cool.
  8. Transfer the toasted seeds and nuts to a blender or food processor. Add black pepper and salt. Pulse a few times until the mixture is finely chopped and combined.
  9. Divide the dough into 4 equal portions.
  10. Roll each portion into a thin flatbread on a floured surface.
  11. Transfer the flatbreads to a baking sheet and lightly brush the tops with olive oil.
  12. Sprinkle the dukkah mixture over the flatbreads, pressing it gently into the dough.
  13. Bake in the preheated oven for 12-15 minutes until golden brown and crispy.
  14. While the flatbreads are baking, prepare the chevre yogurt dip. In a mixing bowl, combine Greek yogurt, chevre, minced garlic, lemon juice, parsley, mint, and salt. Stir well to combine.
  15. Remove the flatbreads from the oven and let them cool slightly.
  16. Cut the flatbreads into wedges and serve warm with the creamy chevre yogurt dip.
  17. Drizzle with extra virgin olive oil before serving.
