Ingredients
- 1 lb chicken livers
- 1/2 lb unsalted butter, softened
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup dry white wine
- 1/4 cup brandy
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1/2 teaspoon dried sage
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground allspice
- Salt and pepper to taste

Directions
- In a large skillet, melt 2 tablespoons of butter over medium heat. Add the chopped onion and minced garlic. Cook until the onion is translucent and the garlic is fragrant, about 5 minutes.
- Add the chicken livers to the skillet and cook until they are no longer pink in the center, about 8-10 minutes. Make sure to stir occasionally to prevent them from sticking to the pan.
- Remove the skillet from heat and let it cool slightly. Transfer the contents of the skillet to a food processor and process until smooth.
- In the same skillet, melt the remaining butter over medium heat. Add the processed liver mixture back to the skillet, along with the white wine, brandy, dried thyme, dried rosemary, dried sage, ground nutmeg, and ground allspice.
- Season with salt and pepper to taste. Stir well to combine all the ingredients. Cook the mixture for an additional 5 minutes, until the flavors meld together.
- Transfer the pate to a serving dish or individual ramekins. Smooth the top with a spatula or the back of a spoon. Cover with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the pate to set and the flavors to develop.
