Ingredients

  • 1 cup farro
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Directions

  1. Rinse the farro under cold water and drain.
  2. Turn on the Instant Pot and select the sauté function.
  3. Add olive oil, chopped onion, and minced garlic to the pot. Sauté for 2 minutes until fragrant.
  4. Add the rinsed farro to the pot and cook for another 2 minutes, stirring occasionally.
  5. Pour in the vegetable broth, dried thyme, salt, and black pepper. Stir well.
  6. Secure the lid on the Instant Pot and set the pressure release valve to the sealing position.
  7. Select the manual pressure cooking setting and set the timer for 10 minutes.
  8. Once the cooking time is complete, allow the pressure to release naturally for 5 minutes. Then, carefully quick-release any remaining pressure.
  9. Remove the lid and fluff the farro with a fork. Let it rest for a couple of minutes before serving.
