In a small bowl, mix together garlic, olive oil, cumin, oregano, black pepper, and salt. Rub the mixture all over the pork roast. Place the roast in a roasting pan.
Bake in preheated oven for 1 hour and 30 minutes, or until the internal temperature of the roast reaches 145°F.
Meanwhile, in a medium bowl, mix together vinegar, water, orange juice, lime juice, cilantro, garlic, cumin, oregano, and salt. Pour over the roast.
Bake for an additional hour, or until the internal temperature of the roast reaches 160°F.
Remove from oven and let rest for 10 minutes before slicing and serving with the Mojo sauce.
