Ingredients
- 3-4 lb pork roast
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon salt
- 1/4 cup white vinegar
- 1/4 cup water
- 1/4 cup orange juice
- 1/4 cup lime juice
- 1/4 cup chopped fresh cilantro
- 2 tablespoons minced fresh garlic
- 1/2 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
Directions
- Preheat oven to 350°F.
- In a small bowl, mix together garlic, olive oil, cumin, oregano, black pepper, and salt. Rub the mixture all over the pork roast. Place the roast in a roasting pan.
- Bake in preheated oven for 1 hour and 30 minutes, or until the internal temperature of the roast reaches 145°F.
- Meanwhile, in a medium bowl, mix together vinegar, water, orange juice, lime juice, cilantro, garlic, cumin, oregano, and salt. Pour over the roast.
- Bake for an additional hour, or until the internal temperature of the roast reaches 160°F.
- Remove from oven and let rest for 10 minutes before slicing and serving with the Mojo sauce.
