Ingredients

  • 1 tablespoon vegetable oil
  • 1/2 cup diced onion
  • 1/2 cup diced celery
  • 1/2 cup diced green bell peppers
  • 1/2 cup diced red bell peppers
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth
  • 3 cups diced cooked chicken
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 2 bay leaves
  • 1/2 teaspoon cayenne pepper
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon sea salt
  • 1/2 cup chopped parsley
  • 1/2 cup chopped green onions

Directions

  1. Heat the oil in a large pot over medium-high heat. Add the onion, celery, and bell peppers and cook until softened, about 5 minutes.
  2. Reduce the heat to medium and sprinkle the flour over the vegetables. Stir until the flour is thoroughly combined and beginning to brown, about 2 minutes.
  3. Slowly pour in the chicken broth, whisking constantly to avoid lumps. Bring to a boil, then reduce to a simmer.
  4. Add the chicken, thyme, oregano, garlic powder, bay leaves, cayenne pepper, black pepper, and salt. Simmer for 45 minutes, stirring occasionally.
  5. Add the parsley and green onions and simmer for an additional 15 minutes. Taste and adjust the seasoning if needed.
  6. Serve hot with cooked white rice.
