Place eggs in a large saucepan and cover with cold water. Bring to a boil over medium-high heat. Boil for 8 minutes, then remove from heat and let eggs sit in the hot water for 10 minutes.
After 10 minutes, drain the hot water and replace with cold water. Peel the eggs and cut in half lengthwise.
Scoop out the yolks and place in a medium bowl. Mash the yolks with a fork.
Add mayonnaise, mustard, vinegar, parsley, salt, and pepper. Mix together until creamy.
Spoon the yolk mixture into the egg whites. Sprinkle with paprika.
