Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 pound boneless, skinless chicken breasts, cut into cubes
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 2 red bell peppers, seeded and sliced
  • 1/4 cup white wine
  • 1/4 cup chicken broth

Directions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Add the chicken and season with oregano, basil, red pepper flakes, and salt.
  4. Cook until the chicken is browned and cooked through, about 8 minutes.
  5. Add the red bell peppers and cook for another 5 minutes.
  6. Add the white wine and chicken broth and cook until the liquid has reduced by half, about 5 minutes.
  7. Serve over cooked rice or noodles.
