Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups pearl barley
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 4 cups chicken or vegetable broth
  • 1/2 cup shredded cheese (optional)

Directions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium-high heat. Add onion and garlic and cook until softened, about 5 minutes.
  3. Add pearl barley, salt, and pepper to the skillet and stir to combine. Cook for 2 minutes more.
  4. Add broth to the skillet and bring to a boil. Reduce heat to low, cover, and simmer for 10 minutes, or until the barley is tender.
  5. Transfer the barley mixture to a 9x13-inch baking dish. Sprinkle with cheese, if desired.
  6. Bake in preheated oven for 15 minutes, or until cheese is melted and bubbly.
