Ingredients
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
2 cups pearl barley
1 teaspoon salt
1/2 teaspoon pepper

Directions
Preheat oven to 375°F (190°C).
Heat olive oil in a large skillet over medium-high heat. Add onion and garlic and cook until softened, about 5 minutes.

Add broth to the skillet and bring to a boil. Reduce heat to low, cover, and simmer for 10 minutes, or until the barley is tender.

Bake in preheated oven for 15 minutes, or until cheese is melted and bubbly.
