Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup powdered sugar
- 3/4 cup unsalted butter, cold and cubed
- 2 large eggs
- 1 cup granulated sugar
- 1/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup fresh grapefruit juice
- 2 tablespoons grapefruit zest
- Powdered sugar, for dusting
Directions
- Preheat the oven to 350°F (175°C) and line a 9x9-inch baking pan with parchment paper.
- In a large mixing bowl, combine the flour and powdered sugar. Add the cold cubed butter and use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs.
- Press the crust mixture evenly into the bottom of the prepared pan. Bake in the preheated oven for 15-20 minutes or until the edges are lightly golden brown.
- Meanwhile, in another bowl, whisk together the eggs, granulated sugar, flour, baking powder, salt, grapefruit juice, and grapefruit zest until well combined.
- Pour the grapefruit filling over the baked crust and spread it out evenly.
- Bake for an additional 20-25 minutes or until the filling is set and slightly golden on top.
- Remove from the oven and let the bars cool completely in the pan on a wire rack. Once cooled, refrigerate for at least 2 hours to allow the bars to set.
- Once chilled, remove the bars from the pan using the parchment paper overhang. Cut into squares or bars of desired size.
