- 2 pounds ripe tomatoes, chopped

- 1 bay leaf
- 1 teaspoon dried oregano
- 1 teaspoon dried basil

Directions
- In a large pot, heat the olive oil over medium heat. Add the chopped onions, carrots, and garlic. Cook until the vegetables are tender, about 5 minutes.
- Add the chopped tomatoes and tomato paste to the pot. Stir well to combine.
- Pour in the vegetable broth and add the bay leaf, oregano, basil, sugar, salt, and pepper. Bring the mixture to a boil and then reduce the heat to low. Simmer for 30 minutes, stirring occasionally.
- Remove the bay leaf from the soup. Use an immersion blender to blend the soup until smooth, or transfer the soup to a blender and blend in batches until smooth.
