The casserole is then baked until golden and bubbly, creating a dish that is both visually appealing and delicious. Serve it as a side dish or as a main course for a vegetarian meal.

Ingredients

  • 4 medium zucchini, sliced
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup ricotta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh basil

Directions

  1. Preheat the oven to 375°F (190°C).
  2. Heat the olive oil in a large skillet over medium heat. Add the diced onion and minced garlic and cook until softened, about 5 minutes.
  3. Add the sliced zucchini to the skillet and cook for an additional 5 minutes, until the zucchini is slightly tender.
  4. In a small bowl, combine the dried oregano, dried basil, dried thyme, salt, and black pepper. Sprinkle the herb mixture over the zucchini and stir to coat.
  5. In a separate bowl, mix together the shredded mozzarella, grated Parmesan, ricotta, chopped parsley, and chopped basil.
  6. Grease a baking dish with olive oil. Spread half of the zucchini mixture on the bottom of the dish, followed by half of the cheese mixture. Repeat the layers with the remaining zucchini and cheese mixtures.
  7. Bake for 25-30 minutes, or until the top is golden and bubbly.
  8. Remove from the oven and let it cool for a few minutes before serving.
  9. Garnish with fresh basil leaves, if desired.
  10. Serve warm and enjoy!
