Ingredients
- 4 pounds beef brisket
- 2 tablespoons olive oil
- 1 large onion, sliced
- 3 carrots, peeled and sliced
- 4 cloves garlic, minced
- 2 cups red wine
- 2 cups beef broth
- 2 tablespoons tomato paste
- 2 tablespoons brown sugar
- 2 tablespoons Dijon mustard
- 1 tablespoon Worcestershire sauce
- 1 tablespoon fresh thyme leaves

Directions
- Preheat the oven to 325°F (165°C).
- Heat the olive oil in a large Dutch oven or oven-safe pot over medium-high heat.
- Season the brisket with salt and black pepper on both sides.
- Sear the brisket in the hot oil until browned on all sides, about 5 minutes per side.
- Remove the brisket from the pot and set it aside.
