Ingredients

  • 4 pounds beef brisket
  • 2 tablespoons olive oil
  • 1 large onion, sliced
  • 3 carrots, peeled and sliced

  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 2 tablespoons brown sugar

Directions

  1. Preheat the oven to 325°F (165°C).
  2. Heat the olive oil in a large Dutch oven or oven-safe pot over medium-high heat.
  3. Season the brisket with salt and black pepper on both sides.
  4. Sear the brisket in the hot oil until browned on all sides, about 5 minutes per side.
  5. Remove the brisket from the pot and set it aside.
  6. Add the sliced onion, carrots, and minced garlic to the pot.
