Ingredients

  • 1 pound kielbasa sausage, sliced
  • 2 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup water
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Directions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the sliced kielbasa sausage and cook until browned, about 5 minutes. Remove from the pot and set aside.
  3. In the same pot, add the sliced onions and minced garlic. Cook until the onions are caramelized and golden brown, about 10 minutes.
  4. Return the kielbasa sausage to the pot with the onions. Stir in the dried thyme, dried rosemary, bay leaf, salt, and pepper.
  5. Pour in the beef broth and water. Bring the soup to a boil, then reduce the heat and simmer for 15 minutes to allow the flavors to meld together.

  7. Remove the bay leaf from the soup.
