Ingredients

  • 1 cup wild rice
  • 2 and 1/2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 carrot, diced
  • 1 cup sliced mushrooms
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped fresh parsley

Directions

  1. Rinse the wild rice under cold water and drain.
  2. In a medium saucepan, bring the vegetable broth to a boil.
  3. Add the rinsed wild rice to the boiling broth.
  4. Reduce the heat to low, cover the saucepan, and let simmer for 45 minutes or until the rice is tender and the liquid is absorbed.
  5. In a large skillet, heat the olive oil over medium heat.
  6. Add the diced onion and minced garlic to the skillet and sauté until the onion is translucent.
  7. Add the diced bell peppers, carrot, and sliced mushrooms to the skillet.
  8. Sauté the vegetables for 5-7 minutes or until they are tender.
  9. Stir in the dried thyme, dried rosemary, salt, and black pepper.
  10. Preheat the oven to 350°F (175°C).
  11. In a large mixing bowl, combine the cooked wild rice and sautéed vegetables.
  12. Transfer the rice and vegetable mixture to a greased casserole dish.
  13. Sprinkle the shredded cheddar cheese over the top of the casserole.
  14. Cover the casserole dish with aluminum foil and bake for 20 minutes.
  15. Remove the foil and continue baking for an additional 10 minutes or until the cheese is melted and bubbly.
