Ingredients

  • 8 slices of bacon
  • 1 block of firm tofu, pressed and cut into strips
  • 1/2 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper, to taste
  • 1 cup breadcrumbs
  • 2 eggs, beaten
  • 4 large tortillas
  • Lettuce leaves
  • Sliced tomatoes
  • Sliced avocado
  • Sliced red onion
  • Sauce of your choice (e.g., sriracha mayo, ranch dressing)

Directions

  1. Preheat your oven to 400°F (200°C).
  2. Place the bacon slices on a baking sheet and bake for 15-20 minutes, or until crispy. Set aside.
  3. In a shallow dish, combine the flour, garlic powder, paprika, cayenne pepper, salt, and pepper.
  4. In another shallow dish, place the breadcrumbs.
  5. Dip each tofu strip into the flour mixture, then into the beaten eggs, and finally into the breadcrumbs, pressing gently to adhere. Repeat with all tofu strips.
  6. Heat a large skillet over medium heat and add enough oil to lightly coat the bottom.
  7. Add the breaded tofu strips to the skillet and cook for 3-4 minutes on each side, or until golden brown and crispy. Remove from the skillet and set aside.
  8. Warm the tortillas in a dry skillet or in the oven.
  9. To assemble the wraps, place a tortilla on a clean work surface.
  10. Top with a few lettuce leaves, some sliced tomatoes, avocado, red onion, crispy tofu strips, and 2 slices of bacon.
  11. Drizzle your preferred sauce over the ingredients.
  12. Fold the sides of the tortilla in, then roll it up tightly, starting from one end.
  13. Repeat with the remaining tortillas and ingredients.
  14. Slice the wraps in half and serve immediately.
