Ingredients

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1/4 cup finely chopped onion
  • 1 clove garlic, minced
  • 1 egg
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup vinegar
  • 1/4 cup water
  • 1/4 cup pineapple chunks, drained
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • Cooked rice, for serving

Directions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground beef, breadcrumbs, milk, onion, garlic, egg, salt, and pepper. Mix until well combined.
  3. Shape mixture into meatballs and place on prepared baking sheet. Bake for 20-25 minutes or until cooked through.
  4. In a small saucepan, combine soy sauce, brown sugar, vinegar, and 1/4 cup water. Bring to a boil, then reduce heat and simmer for 5 minutes.
  5. In a small bowl, mix cornstarch and 2 tablespoons water. Stir into sauce and cook until thickened.
  6. Add pineapple chunks to sauce and cook for another 2-3 minutes.
