Ingredients
- 1 package extra-firm tofu
- 1 cup mixed nuts (such as walnuts, almonds, and pecans), chopped
- 1 cup breadcrumbs
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon soy sauce
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup vegetable broth
Directions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, crumble the tofu and add the chopped nuts, breadcrumbs, onion, and garlic.
- Heat the olive oil in a skillet over medium heat and sauté the onion and garlic until softened and fragrant.
- Add the soy sauce, tomato paste, thyme, oregano, basil, paprika, salt, and black pepper to the skillet. Stir well to combine.
- Transfer the skillet mixture to the mixing bowl with the tofu and nut mixture. Mix everything together until well combined.
- Grease a loaf pan with olive oil or cooking spray. Press the tofu and nut mixture into the pan, using a spoon or your hands to pack it tightly.
- Pour the vegetable broth over the top of the loaf to keep it moist during baking.
- Bake in the preheated oven for 45-50 minutes, or until the loaf is firm and golden brown on top.
- Remove from the oven and let it cool for a few minutes before slicing and serving.
