Ingredients

  • 1 package extra-firm tofu
  • 1 cup mixed nuts (such as walnuts, almonds, and pecans), chopped
  • 1 cup breadcrumbs
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup vegetable broth

Directions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, crumble the tofu and add the chopped nuts, breadcrumbs, onion, and garlic.
  3. Heat the olive oil in a skillet over medium heat and sauté the onion and garlic until softened and fragrant.
  4. Add the soy sauce, tomato paste, thyme, oregano, basil, paprika, salt, and black pepper to the skillet. Stir well to combine.
  5. Transfer the skillet mixture to the mixing bowl with the tofu and nut mixture. Mix everything together until well combined.
  6. Grease a loaf pan with olive oil or cooking spray. Press the tofu and nut mixture into the pan, using a spoon or your hands to pack it tightly.
  7. Pour the vegetable broth over the top of the loaf to keep it moist during baking.
  8. Bake in the preheated oven for 45-50 minutes, or until the loaf is firm and golden brown on top.
  9. Remove from the oven and let it cool for a few minutes before slicing and serving.
