Ingredients

  • 2 large sweet potatoes
  • 1 can of black beans, drained and rinsed

  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 4 large tortillas

Directions

  1. Preheat the oven to 400°F (200°C).
  2. Pierce the sweet potatoes several times with a fork and place them on a baking sheet. Bake for 40-45 minutes, or until they are soft and easily mashed.
  3. Meanwhile, heat the olive oil in a large skillet over medium heat. Add the diced red onion and minced garlic, and sauté until they are softened and fragrant, about 5 minutes.
