Ingredients

  • 3 cups sushi rice
  • 4 cups water
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 10 nori sheets
  • Assorted vegetables (carrots, cucumber, avocado, bell pepper)
  • Soy sauce and wasabi for serving

Directions

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. In a medium-sized pot, combine the rinsed sushi rice and water. Bring to a boil, then reduce the heat to low and cover. Cook for 15 minutes or until all the water is absorbed.
  3. While the rice is cooking, mix the rice vinegar, sugar, and salt in a small bowl. Set aside.
  4. Once the rice is cooked, transfer it to a large mixing bowl. Gradually pour the vinegar mixture over the rice while gently folding it in with a wooden spoon or rice paddle. Allow the rice to cool to room temperature.
  5. Prepare the vegetables by cutting them into thin strips. Set aside.
  6. Place a bamboo sushi mat on a clean work surface. Lay a sheet of nori on top of the mat, shiny side down.
  7. Wet your hands with water to prevent sticking. Take a handful of sushi rice and evenly spread it over the nori, leaving about 1 inch of the nori sheet empty at the top.
  8. Arrange the vegetable strips on top of the rice, near the bottom edge of the nori sheet.
  9. Using the sushi mat, carefully roll the nori sheet tightly until you reach the empty top part. Wet the top edge with water to seal the roll together.
  10. Repeat the process with the remaining nori sheets and ingredients.
  11. Once all the rolls are made, use a sharp knife to slice them into bite-sized pieces.
