Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 jalapeno pepper, seeded and minced
  • 1 pound cooked turkey, shredded or diced
  • 1 can diced tomatoes
  • 4 cups chicken broth
  • 1 can black beans, rinsed and drained
  • 1 cup frozen corn
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups tortilla chips
  • Optional toppings: diced avocado, shredded cheese, chopped cilantro, lime wedges

Directions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion, garlic, and jalapeno pepper. Cook until the onion is translucent and the garlic is fragrant, about 5 minutes.
  3. Add the cooked turkey, diced tomatoes, chicken broth, black beans, frozen corn, chili powder, cumin, oregano, paprika, salt, and pepper. Stir well to combine.
  4. Bring the soup to a boil, then reduce the heat and simmer for 15-20 minutes to let the flavors meld together.
  5. While the soup is simmering, prepare the tortilla strips. Preheat your oven to 350°F (175°C). Cut the tortilla chips into thin strips and spread them on a baking sheet. Bake for about 10 minutes, or until crispy.
  6. Serve the soup hot, topped with tortilla strips, diced avocado, shredded cheese, chopped cilantro, and a squeeze of fresh lime juice. Enjoy!
