Ingredients

  • 2 lbs bone-in chicken pieces
  • 2 cups long grain rice
  • 4 cups chicken broth
  • 2 large onions, sliced

  • 1 teaspoon paprika
  • 1 teaspoon turmeric powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup vegetable oil
  • 2 tablespoons butter
  • 2 tomatoes, diced
  • Fresh cilantro, chopped (for garnish)

Directions

  1. In a large skillet, heat the vegetable oil and butter over medium heat. Add the sliced onions and cook until caramelized, about 20 minutes. Set aside.
  2. In a separate pot, add the chicken broth and bring to a boil. Add the rice and reduce the heat to low. Cover and simmer for 15-20 minutes, or until the rice is cooked and the broth is absorbed. Fluff the rice with a fork.
  3. In the same skillet used for the onions, add the minced garlic and sauté until fragrant. Add the chicken pieces and cook until browned on all sides. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the diced tomatoes, cumin powder, paprika, turmeric powder, salt, and black pepper. Cook for 2-3 minutes until the tomatoes are softened and the spices are fragrant.
  5. Return the chicken to the skillet and coat it with the tomato mixture. Cover and simmer for 15-20 minutes, or until the chicken is cooked through and tender.
  6. To assemble, place a layer of caramelized onions on the bottom of a serving dish. Spoon the cooked rice over the onions. Arrange the chicken pieces over the rice and pour any remaining tomato mixture over the chicken.
