Ingredients
- 8 egg roll wrappers
- 2 cups cooked turkey, shredded
- 1 cup stuffing
- 1/2 cup cranberry sauce
- 4 ounces cream cheese, softened
- 1/4 cup green onions, chopped
- 1/4 cup chopped parsley
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- Oil for frying
Directions
- In a large mixing bowl, combine the shredded turkey, stuffing, cranberry sauce, cream cheese, green onions, parsley, garlic powder, onion powder, salt, pepper, and paprika. Mix well until all the ingredients are evenly combined.
- Lay one egg roll wrapper on a clean surface, with one corner facing you. Place about 2 tablespoons of the turkey mixture in the center of the wrapper.
- Fold the bottom corner over the filling. Fold in the sides, then roll tightly towards the remaining corner. Use a little water to seal the edges of the wrapper.
- Repeat the process with the remaining wrappers and filling.
- In a large skillet, heat oil over medium-high heat. Carefully add the egg rolls, seam side down, and fry until golden brown on all sides, about 3-4 minutes.
- Remove the egg rolls from the skillet and drain on a paper towel-lined plate.
- Serve the Thanksgiving egg rolls warm with a side of gravy for dipping.
