Ingredients

  • 2 pounds boneless, skinless chicken breasts, cut into bite-sized pieces

  • 3 cloves garlic, minced
  • 2 tablespoons Thai red curry paste
  • 1 can (14 ounces) coconut milk
  • 1 cup chicken broth
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 cup snap peas
  • 1 cup bamboo shoots
  • 1 cup fresh basil leaves
  • 1 lime, juiced

Directions

  1. In a large pan, heat the vegetable oil over medium heat.
  2. Add the sliced onion and minced garlic to the pan and sauté until the onion is translucent, about 5 minutes.
